There are two main types of Cinnamon. Cassia and Ceylon “True” Cinnamon. Although the Cassia variety is most common, Ceylon or True Cinnamon has a distinctive shape, light colour, and delicate taste. It also has properties that serve many health benefits and does not contain as high of an amount of coumarin, that can be toxic to the liver.
